Come monsoon, in a process akin to fermentation, processed green beans are spread out on the floor in warehouses along the Malabar coast and their windows opened to welcome the salt laden sea winds which swell and soften them over weeks.The same is sun-dried again and packed.
This unique process replaces the usual acidity with spicy, musty ,woody notes with chocolate and nuts and a hint of malt.An acquired taste for many, most coffee lovers swear by the intensely flavourful, strong, full bodied cup with a heady flavour long after it has been consumed. Born out of an accident, it is said that a consignment of coffee en route to Europe was subject to a heavy storm around the Cape of Good Hope. The wet coffee was dried on the deck and the resultant coffee grew in appreciation from its customers, particularly from Scandinavia, thus giving birth to another quintessentially Indian story; The Monsooned Malabar coffee or Malabar Monsoon coffee as many call it.
