All About

Strong Assam Tea

Assam tea is symbolic of the resident Rhino, robust, strong, and big on quality. The native variety of tea bushes, the ‘Assam Jat’ is unique and when grown on the floodplains of the mighty Brahmaputra River and its tributaries, generates a rare quality that cannot be found anywhere in the world. It’s famed second flush quality is the highlight of the whole year’s produce and with its distinct ‘malty’ flavour makes for a great and satisfying cup of tea. As a cup to start one’s day, there cannot be anything more satisfying for a connoisseur of tea.

Motley Brew’s Strong Assam Blend is a carefully curated blend of the finest Assam second flush teas with a bold, malty flavour which is naturally a tad sweet and less astringent. Blends well with milk and a sweetener too.

As with all black teas, this tea contains natural anti-oxidants referred to as flavonoids, which help fight free radicals in the body.

A high percentage of catechins are present in black tea which boosts energy and improves metabolism.

Black teas contain a good portion of potassium, which is known to improve hydration, reduce fatigue and improve energy. Traces of manganese are also present which help bone density. As with any natural product, taken in moderation, black teas add to the overall well-being of a person, keeping them naturally alert and vibrant with a sense of calm.

A search on the public domain would yield a host of health benefits on the consumption of black tea.

  1. Bring unfiltered water to a gentle boil to approximately 90 deg. Celsius (208 deg. Fah.).
  2. Steep tea in a ratio of 1 tsp tea (2.5 gms approx.) per cup for about a minute, and then add milk in the ratio of 1 part milk to 3 parts water, if a thicker brew is desired, increase the milk.
  3. Let it simmer on the boil for 3 to 5 minutes depending on a personal choice of strength. Rest it to cool a little and extract maximum flavour. Add a sweetener to taste.
  4. By applying the principles of molecular gastronomy, the reaction between tea, and milk protein which causes coagulation can be prevented by first brewing the tea alone then adding milk.

LAL CHAI (Red tea without milk)

  1. Heat water and once it comes close to a boil, add the tea, and let it simmer on boil for 3 to 5 minutes as per individual choice.
  2. Add sweetener if desired only.
  3. A dash of lemon enhances the flavour, and transforms the colour from deep red to a mellow red.
  4. A local variant in the tea districts is to add lemon, sugar and a hint of Pink Himalayan salt, an acquired taste but immensely refreshing. Worth a try!
  • Takes well to milk and sugar/sweetener for a perfect anytime brew.
  • Add a few drops of lemon to the infusion alone, watch the colour change and enjoy the freshness of lemon and tea together. Best post a hearty meal.

Suggested food pairing

  • An ideal accompaniment to fried foods, whether a fish and chips meal or the traditional Indian paratha, works well
  • Scones, Buttery Cookies, Cakes, and bakery products. Traditional Indian fried snacks.
